Marinade Style Grilled Vegetable Salad

It’s always good to give those vegetarians an option on the barbecue. Veggie burgers get a little boring and they’re not that great anyway, in my opinion. If you’re grilling for vegans you need to keep in mind that if you put together a grilled vegetable salad and add olive oil and some good spice, maybe even hot pepper for the right people, it will be a full meal on it’s own. And for professed vegetarians (as opposed to vegans – important distinction), just sprinkle cheese on top for the full meal deal.
This recipe calls for a marinade and provides a recipe for making it yourself. If you prefer you can buy pre-made marinades. I’ve listed several of my favorites below this post. The great thing about marinades is that with a veggie dish you can still use a steak or chicken marinade and it will taste great.

Grilled Flatbread Recipe with Prosciutto, Parmesan, and Arugula
This great little flatbread recipe from The New Potato makes an appetizer portion for four individuals, or a single nine inch flatbread pizza. I love these flatbread toppings. You can make your own pizza dough for this one or scroll down to the bottom and peruse the flatbread mixes available on Amazon. I’ve tried several of them and they are excellent, in case you’ve ever wondered where to buy flatbread. I’ve listed my favorites at the bottom of the pave. This flatbread pizza recipe has been modified for use on a bbq grill mat but you can just cook it in your kitchen oven if you prefer.
INGREDIENTS LIST for Flatbread Recipe
Sufficient amount of flatbread pizza dough, either homemade or store bought, to make a 9″ flatbread pizza.
4 slices of prosciutto – After all, this is an Italian recipe. Gotta have that prosciutto.
1/4 cup pesto – you can also just use fresh basil if you prefer or if you have it on hand. Fresh basil is an awesome flatbread topping.
1/4 cup freshly grated Parmesan cheese.
1/2 cup of fresh arugula
1 tbsp fresh Lemon juice

Cedar Plank Salmon
Using a Cedar Plank is such a simple and elegant technique for cooking salmon. If you’re not interested in the recipe below, scroll down farther and check out the cedar plank purchase options. But definitely consider this recipe – it’s a great one. The heat of the grill will gently steam the fish and, unlike cooking directly on the grate, the fish will retain a tender moist flavor. The cedar wood imparts a variety of pleasant woodsy flavors and the grill adds that great bbq smokey taste. You can impart additional tastes by soaking the cedar planks in advance in your favorite flavor.
